They say, breakfast is the most important meal of the day, and I couldn’t agree more! Since becoming a pastry chef, my breakfast habits have had to change. My typical breakfast that consisted of a coffee and croissant is no longer sufficient. Working from 6am to 3pm without a break means a big, nutritious breakfast has become more important than ever. I did a little research into the best way to start your day, nutritionally speaking, and here’s what I found out:

Eggs, should be THE official superfood. They are one of the most nutritious foods on the planet, containing almost every nutrient we need, and enough protein to keep you full all day long.

Avocados contain an abundance of vitamins including Vitamin K, Folate, Vitamin C, Potassium, Vitamin E and Copper. In addition, the consumption of avocados has been proven to reduce the risk of heart attack and stroke, and can even help you lose weight.

Spinach is packed full of iron, folate and Vitamins C and B, all of which work together to reduce water retention, prevent high blood pressure and prevent macular generation and vision loss.

Bacon is delicious.

It’s amazing how much more energy I have when I start the day with this Breakie Bowl. I don’t necessarily eat this everyday but even incorporating this into my diet a few days a week has definitely helped me feel a lot healthier. Tell me, what is your favourite breakfast

Ingredients

  • ½ an avocado
  • Some bacon
  • A big handful of spinach
  • 2 Eggs
  • 1 tbsp of good quality pesto

Fry the bacon until it’s nice and crispy.

Use a fork to smash the avocado then season with salt and pepper.

Poach or fry the eggs.

Place everything in a bowl with a large tablespoon of pesto.
